I put all my healthy taste buds together to figure out how I was going to come up with a “no meat” lunch that wasn’t going to be another boring salad.
1 Quinoa Packet
2 Cans of Tuna Fish
1 small red onion
2 Romaine Lettuce Bunches
Sea Salt to Taste
Separated and individually wash each layer (in cold water) and leave them out to dry on a cut and spread out brown paper bag until you are done with the rest.
For my first time making Quinoa I used :
I followed directions as instructed (all you need is water) but since I’ve tried Quinoa before, it wasn’t fully cooked to my liking so I kept adding water until I was happy with the texture. (If you like a little spicy in your foods you will love this!)
**Remember I made lunch for two and this was more than enough for two people.**
As the Quinoa was cooking I began the Tuna mix:
-Chop up small red onion as fine as you can and pour into bowl.
-Cut the avocado into large squares to avoid mushiness and add to bowl
-Drain your favorite kind of tuna fish and add to bowl (I use Bumblebee Tuna Fish *in water*)
-Mix everything together and add sea salt and lime to your liking.
*** Try not to make your Tuna mix too salty because you Quinoa has PLENTY of taste***
Grab a layer of lettuce spread out a spoonful of quinoa then add a spoonful of your tuna mix annnnddd
